The Mimosa cake with Sicilian lemons is a traditional Italian dessert linked to the Women’s Day. In Italy, in fact, mimosa is one of the symbols of Women’s Day and in the language of flowers it indicates strength and femininity.
We report below the ingredients to make it:
- Custard (5 egg yolks, 500 ml of milk, 150 g of sugar, 60 g of flour 00, 1 grated Sicilian lemon zest, 1 Sicilian lemon juice);
- 4 eggs;
- 120 g of sugar;
- 120 g of flour 00;
- 1 grated Sicilian lemon zest.
Let’s move on to the preparation of the Torta Mimosa
To start, let’s prepare the two sponge cakes that will form the base and the covering of our cake. To make them, put the eggs, sugar and grated Sicilian lemon peel in a bowl and whisk everything for 10 minutes.
Then add the flour (a little at a time) and mix everything together. Place the dough in a mold and bake it in a preheated static oven at 180 Β° for about 30 minutes.
Repeat the operation for the second sponge cake as well.
Now, remove the crusts from the two sponge cakes and divide them in two by cutting horizontally. Β We take 3 layers and wet them with orange juice. Now take the lemon custard from the fridge and spread it between the 3 layers of sponge cake (don’t use all the cream, you’ll need some for the topping). We take the last layer of sponge cake and cut it into cubes. Letβs combine all the layers and spread the custard as a topping. Finally, we sprinkle the top layer with the cubes of sponge cake.
Now let’s put our Torta Mimosa with Sicilian lemons in the fridge for at least 2 hours.
Before serving, sprinkle some icing sugar over the cake and, if you want, you can add strawberries to give it an even more appetizing look.
