This salad is a triumph of colours and flavours, thanks to the use of typical Sicilian vegetables such as tomatoes, aubergines, cucumbers and courgettes. All dressed with high-quality extra virgin olive oil and a pinch of oregano for an even more intense flavour.
Ingredients:
- 200g cherry tomatoes
- 1 aubergine
- 1 cucumber
- 1 courgette
- 100g round tomatoes
- 50g black olives π«
- Extra virgin olive oil π«
- Oregano
- Salt and pepper
Preparation:
- Wash all the vegetables thoroughly.
- Cut the cherry tomatoes in half, the aubergine into cubes, the cucumber into thin slices and the courgette into rounds.
- Combine all the vegetables in a large bowl.
- Add the black olives, extra virgin olive oil, oregano, salt and pepper. π«
- Stir gently to mix all the ingredients well.
- Leave to rest in the fridge for at least 30 minutes before serving. βοΈ
Recommendations:
- For an even more delicious taste, you can also add capers or feta cheese cubes to the salad.
- If you prefer a stronger flavour, you can use balsamic vinegar from Modena instead of lemon.
